I was in a quandary about what to fix for dinner. Then it came to me...an easy baked chicken dish. First, washed and patted dry a couple of chicken leg quarters. then lightly seasoned with salt and pepper on top and under skin on both sides.

Before all this the oven was pre-heated to 350 degrees. A large pan or baking dish was sprayed with nonstick spray(for easy clean up).

After salt and pepper on chicken then add 1/2 tablespoon of each of following: thyme,oregano,basil,marjoram,parsley,(or if you have these, dried Italian seasoning works just as good) and a pinch of red pepper flakes.

Coat both sides and under skin with spices then place skin side up in baking dish and place in oven uncovered for 25-30 minutes.

Remove from oven turn chicken over and place back in oven for additional 15-20 minutes covering for last 10 minutes.

Remove from oven let stand 3-5 minutes before serving. Pair with your favorite side and enjoy.
