If you're like me you like a good plate of hash-browns. I like mine with meat and peppers and onions and tomatoes and,well pretty much everything on them. Sometimes you don't have time to go to your favorite restaurant to get them or you don't feel like going.

Whatever the case I have the answer. Quick and easy hash-browns with your choice (based on what's in your fridge) of what goes in them.

Now me, I like to do all my food when possible from scratch, all the way, but sometimes that isn't an option.

So here's my hack on Quick and easy hash-browns.

First off, you'll need to plan ahead for this.

While you're out grocery shopping pick up a bag of frozen diced potatoes, a bag of frozen stir-fry vegetables, and a can of diced tomatoes with green chiles (if you like it with a little kick) and of course whatever kind of meat you like (in this case ground hot sausage) and shredded cheese if that's your thing along with any other veggies or toppings you like.

If you have these ingredients in your fridge and freezer you'll be able to do your own Quick and easy hash-browns anytime you want.

Start off with your pan (preferably non-stick) heating up over medium heat with a couple of tablespoons of oil.

Then brown your sausage and drain off excess fat, then add your vegetables cook for a couple of minutes then add your potatoes and cook as per the package directions.

Half way through add meat back in and add diced tomatoes and continue cooking until done.

Top with shredded cheese and viola' your Quick and easy hash-browns are ready to eat.
